Shrimp Sheet Pan Fajitas Recipe

This is such a simple way to cook up shrimp and veggies!

Ingredients

  • 1 pound medium shrimp
  • 1 yellow bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 small onion thinly sliced
  • 3 limes
  • cilantro (optional)
  • 6 tortillas warmed

Fajita Seasoning:

  • 1/2 teaspoon cumin
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 teaspoon cayenne pepper (optional)

Instructions

  • Start by preheating the oven to 400 degrees.
  • Spray the baking sheet with cooking spray and then add on the shrimp, peppers, and onion.
  • Grab a small bowl and mix together the seasonings. Pour on top of the shrimp mixture. Mix.
  • Put the baking pan in the oven and cook for 9 minutes. If you're going to warm up your tortillas, put them in the oven during the last minute of time on the baking pan to warm them up.
  • Once done, take the pan out of the oven and top with a bit of lime juice.
  • Serve in the tortilla or just as it is for a low carb option. Don't forget the toppings!
