Red Velvet Cake Mix Cookies

These Red Velvet Cake Mix Cookies are soft, chewy, and full of rich chocolate flavor.

Equipment

  • Large mixing bowl

Ingredients

  • 1 box chocolate cake mix
  • 1/3 cup canola or vegetable oil
  • 2 eggs
  • ½ teaspoon red gel food coloring
  • 3 tablespoons granulated sugar
  • 6 tablespoons powdered sugar

Instructions

  • Line a cookie sheet with parchment paper and set aside.
  • In a medium-sized bowl, combine cake mix, oil and eggs. Mix thoroughly.
  • Once you achieve a dough-like consistency, add red gel food coloring. Mix until tinted completely.
  • Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
  • Remove from refrigerator. Pre-heat your oven to 350 degrees F.
  • Roll dough into one-inch balls and coat with a thin layer of granulated sugar.
  • Follow by coating the cookie dough ball in powdered sugar.
  • Place on lined cookie sheet about 2 to 3 inches apart from each other.
  • Bake for 9 to 12 minutes. Let cool completely.

Notes

  • When adding food coloring to your batter, add a tiny bit at a time until you get the desired red color. Too much food dye can cause your cookies to become too dense. 
  • Make sure to chill your cookie dough before baking, this will help give it a delicious crinkle and prevent them from spreading while in the oven. 
  • Be sure not to overbake these cookies, they should be lightly golden brown when done. Once cool, they will have that signature crackled crust that everyone loves!
  • If you want even sized red velvet cookies, I recommend that use a cookie scoop that will give you 1-inch balls for even sized cookies. 
  • White chocolate chips, cream cheese chips, or lemon zest can be added to the dough for incredible flavor. 
  • If you don't have parchment paper, you can use a silicone mat on your baking tray instead. 
  • You can use these Christmas cookies as gifts, if you add a few to a pretty bag. 
  • Don't have a mixer? Use a wooden spoon to do the mixing instead. 
  • Melted butter can be used instead of oil in the cookie dough. 
  • For an extra decadent treat, you can top these cookies with cream cheese frosting and sprinkles.
