  • 4 over-ripe bananas
  • ½ cup butter softened
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup walnuts
  • 1 ½ cup flour spooned and leveled
  • 1 teaspoon baking soda
  • 2/3 cup chocolate chunks
  • ½ teaspoon salt
  1. Preheat oven to 350 degrees F.
  2. Line or grease a muffin tin.
  3. In a large mixing bowl, beat sugar and butter together until light and fluffy.
  4. Beat in eggs and vanilla.
  5. In a separate bowl, thoroughly mash the bananas.
  6. Fold the bananas into the sugar mixture.
  7. In a separate mixing bowl, whisk the flour, baking soda, and salt together, until thoroughly combined.
  8. Using a spatula, gently mix the flour mixture into the sugar mixture.
  9. Gently fold in the walnuts and chocolate chunks.
  10. Pour mixture into prepared muffin tin, filling just over 2/3s full.
  11. Allow batter to sit in the tin for 20 minutes before placing in the oven.
  12. Bake for 18-20 minutes or until just beginning to go brown on the top.
