Pressure Cooker Irish Pork Stew

Ingredients

  • 2 to 2.5 lbs Smithfield Roasted Garlic & Herb Marinated Fresh Pork Loin Filet
  • 2 tablespoons vegetable oil divided
  • 1 large onion chopped
  • 2 garlic cloves minced
  • 4 medium potatoes peeled and cut into quarters
  • 1 ½ cups of mushrooms optional
  • 2 to 3 carrots diced
  • 2 celery stalks diced
  • ¾ teaspoon caraway seeds
  • 3 tablespoons balsamic vinegar
  • 4 cups of chicken broth

Instructions

  • Press Sauté button on your electric pressure cooker and let it heat, then add one tablespoon oil.
  • Cut the pork into bite-sized chunks and add the pork to the pot. Brown on all sides.
  • Remove the pork.
  • Add the remaining oil, onions, and garlic to the pressure cooker. Stir until onions are tender.
  • Add caraway seeds. Stir.
  • Add the remaining ingredients, return the pork to the pot and stir.
  • Seal the pressure cooker. Press “Cancel” to stop Sauté mode.
  • Press the Manual Button, set time for 25 minutes. Make sure the valve is turned to “sealing.”
  • When the timer beeps, let the pressure release naturally for at least 10 minutes. Season with salt and pepper to taste.

Notes

If you want, you can replace one cup of the broth with a bottle of dark ale to give the stew a deeper flavor.
The mushrooms are optional. They do add a great, meaty texture but the dish is just as tasty without them.
