Black Bean Tostadas

  • 2 cans black beans drained and rinsed
  • 4 oz cream cheese softened
  • 1 teaspoon hot sauce
  • 1 package corn tostada shells
  • 1 cup queso fresco or feta
  • 1 avocado diced
  • 1 large tomato diced
  • 1 red onion diced
  • Juice of 1 lime


  • In a medium saucepan, add beans. Heat over medium high heat, until heated thoroughly.
  • Add hot sauce and remove from heat.
  • Add cream cheese and beat bean mixture until thoroughly combined.
  • Prepare a baking sheet with parchment paper.
  • Lay tostada shells on pan, avoid overlapping.
  • Spread a layer of beans over the shells, and top with cheese.
  • Place under a low broiler for about 3 minutes or until cheese begins to melt and shells begin to brown on the edges.
  • In a small mixing bowl, add the avocado, tomato, onion, and lime juice. Mix together
  • Spoon topping mixture over the prepared tostadas and enjoy!
