Make Ahead Breakfast Casserole Cups
Great breakfast for on the go!
- 9 eggs
- 1/4 cup milk
- 1/4 cup diced onions
- 1/2 cup Jimmy Dean fully cooked sausage crumbles
- 1/2 cup diced red bell pepper
- 1/2 cup chopped fresh spinach
- 1/2 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
Preheat oven to 350°F. Line muffin tin with silicone liners or spray with non-stick cooking spray.
Combine all ingredients in a large bowl and whisk until well mixed.
Divide mixture evenly between muffin cups.
Bake for 20 minutes or until the eggs are firm and the tops spring back when touched.
Serve immediately or let cool completely and freeze. To serve, microwave for 30-45 seconds.
