Ingredients

  • 9 eggs
  • 1/4 cup milk
  • 1/4 cup diced onions
  • 1/2 cup Jimmy Dean fully cooked sausage crumbles
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped fresh spinach
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Instructions

  • Preheat oven to 350°F. Line muffin tin with silicone liners or spray with non-stick cooking spray.
  • Combine all ingredients in a large bowl and whisk until well mixed.
  • Divide mixture evenly between muffin cups.
  • Bake for 20 minutes or until the eggs are firm and the tops spring back when touched.
  • Serve immediately or let cool completely and freeze. To serve, microwave for 30-45 seconds.
