Instant Pot Salsa Verde Chicken Tacos

Ingredients

  • 3 boneless skinless chicken breasts
  • 1 cup salsa verde
  • 1/4 cup honey
  • 1/3 cup lime juice
  • 3 teaspoons taco seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Hot sauce to taste
  • 12 soft tacos
  • Lettuce shredded
  • Tomatoes chopped
  • Avocadoes chopped
  • Cilantro chopped
  • Sour cream optional
  • Cheese shredded, optional

Instructions

  • Place the chicken breasts in the Instant Pot.
  • Pour over the salsa verde, honey and lime juice.
  • Season with the taco seasoning, paprika, salt and pepper, ensuring even coverage of all chicken with the spices.
  • Place the lid on the Instant Pot and seal. Cook for 7 minutes (10 if cooking from frozen) and allow to natural release.
  • Shred the chicken with two forks, and add hot sauce and additional seasoning, to taste.
  • Serve 1/2 cup of the chicken on each soft taco, along with a sprinkle of lettuce, tomatoes, avocadoes and cilantro.
