Loaded M&M Oreo Cookie Bars

These Loaded M&M Oreo Cookie Bars are chewy, minty, and a perfect dessert to make for St. Patrick's Day.

Equipment

  • 9x13 baking dish lined with parchment paper
  • Electric mixer

Ingredients

  • 2 cups unsalted sweet cream butter melted
  • 2 1/2 cups sugar
  • 1 cup brown sugar packed
  • 4 eggs
  • 2 egg yolks
  • 4 teaspoons vanilla extract
  • 5 cups flour
  • 4 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 2 teaspoons salt
  • 2 cups chocolate chips
  • 2 cups Mint M&M’s
  • 24 Mint Oreo cookies chopped

Instructions

  • Preheat your oven to 350 degrees.
  • Using a stand mixer, cream together the melted butter, sugar and brown sugar until combined.
  • Mix in the eggs and egg yolks one at a time, mixing well after each egg.
  • Mix in the vanilla.
  • In a medium bowl, mix together the flour, cornstarch, baking powder and salt.
  • Gradually stir dry ingredients into the wet until completely combined.
  • Mix in 1 ½ C chocolate chips, 1 ½ C M&M’s and half of the chopped Oreos.
  • Spread the batter into the baking dish and top with remaining chocolate chips, M&M’s and chopped Oreos.
  • Bake 40 minutes or until edges just begin to turn golden brown.
  • Allow to cool before cutting and enjoying.

Notes

  • Make sure that you are using melted butter and not softened butter for this recipe.
  • Measure out all of your ingredients before you begin baking, so that everything is ready when needed.
  • Also, be sure to let these bars cool completely before cutting and serving so that they hold their shape.
  • I prefer to use unsalted butter when baking, but salted butter can be used instead.
  • To test for doneness insert a toothpick into the center of the cookie bars, if it comes out with a few moist crumbs then they are done.
  • If you don't have parchment paper, you can spray your baking dish well with nonstick cooking spray instead. Make sure to spray the sides of the pan well.
  • If you want to add a little saltiness to this recipe, sprinkle some chopped pretzels or chocolate-covered pretzels on the top of the bars and then press them down with a spatula.
