Baked Caesar Chicken

Equipment

  • Mixing bowl

Ingredients

  • 4 Bone-in and skin-on chicken thighs
  • 1 ⅓ cups Parmesan cheese grated
  • 1 cup Caesar dressing
  • ½ cup Sour cream
  • 1 cup Pork rind crumbs
  • Pepper to taste

Instructions

  • Preheat the oven to 400 degrees.
  • Season the chicken with pepper, and place in a 9x9 well-greased baking dish.
  • In a bowl, mix together the caesar dressing, sour cream and parmesan cheese.
  • Spread the mixture over the chicken in the baking dish.
  • Sprinkle the pork rind crumbs over the chicken.
  • Bake for 40 minutes, or until the chicken is cooked through.

Notes

  • Be sure to use freshly grated parmesan cheese instead of the pre-grated stuff in a green can.
  • Pulse pork rinds in a food processor to make sure they are finely ground for topping the chicken thighs.
  • To reduce fat and calories, you can use fat free or low-fat caesar dressing if you prefer.
  • You could also season the chicken with salt, garlic powder, and onion powder if you want to add more flavor.
  • If you don't have bread crumbs or pork rinds, you could also top the chicken with crushed croutons. Instead of crushing the pork rinds in a food processor you could also use a rolling pin and ziploc bag.
  • Garnish this melt-in-your-mouth chicken with fresh parsley for an extra pop of color and fresh flavor.
