- 4 Bone-in and skin-on chicken thighs
- 1 ⅓ cups Parmesan cheese grated
- 1 cup Caesar dressing
- ½ cup Sour cream
- 1 cup Pork rind crumbs
- Pepper to taste
Preheat the oven to 400 degrees.
Season the chicken with pepper, and place in a 9x9 well-greased baking dish.
In a bowl, mix together the caesar dressing, sour cream and parmesan cheese.
Spread the mixture over the chicken in the baking dish.
Sprinkle the pork rind crumbs over the chicken.
Bake for 40 minutes, or until the chicken is cooked through.
- Be sure to use freshly grated parmesan cheese instead of the pre-grated stuff in a green can.
- Pulse pork rinds in a food processor to make sure they are finely ground for topping the chicken thighs.
- To reduce fat and calories, you can use fat free or low-fat caesar dressing if you prefer.
- You could also season the chicken with salt, garlic powder, and onion powder if you want to add more flavor.
- If you don't have bread crumbs or pork rinds, you could also top the chicken with crushed croutons. Instead of crushing the pork rinds in a food processor you could also use a rolling pin and ziploc bag.
- Garnish this melt-in-your-mouth chicken with fresh parsley for an extra pop of color and fresh flavor.
