Notes

  • You want to cook packed meat like sausage and hot dogs right away as opposed to steak and chops. Meats like steaks, chops, or muscle meats aren’t susceptible to bacteria forming but bring to room temperature before cooking. Sausages or packed meats are filled with ground meat, spices, and sometimes breading or grains, making these meats very susceptible to bacteria forming if left to warm up slowly.
  • Packed meats like sausages retain natural juices and when cooked heat up under the pressure of the casing. Slicing a plump juicy sausage will allow those juices to burst and flow away. Letting them rest keeps that juice in for the meat to re-absorb and prevent drying out. Subsequently, biting into a plump juicy sausage will release all that lovely but extremely hot flavor into your mouth, ouch!
  • There is no need to flip these sausages they can cook evenly without being flipped.
  • If your links are frozen you will add additional cook time.
  • The internal temperature of the sausage should reach 160 degrees F, or 165 degrees if you are using chicken sausage. Make sure you get the thermometer inside the middle of the sausage.
  • Make sure to place the links in a single layer so that they cook evenly.
