- 1 can Palmini linguine noodles drained and rinsed well
- ¼ cup cucumber Chopped
- ¼ cup red bell pepper chopped
- ¼ cup red onion chopped
- 1 hard boiled egg chopped
For the Dressing
- ¼ cup mayonnaise
- 2 tablespoons sour cream
- 1 teaspoon red wine vinegar
- 1 teaspoon Swerve confectioners sugar substitute
- ½ teaspoon Dijon mustard
- Pinch garlic powder
- salt and pepper to taste
Place all of the dressing ingredients into the bottom of a large mixing bowl, and stir to combine well.
Add the remaining ingredients to the mixing bowl, and toss to coat and combine well.
Serve immediately, or chill first if preferred.
