Healthy Double Chocolate Chip Cookies

Not just low-fat, these cookies are actually good for you. Chock full of antioxidants, omega-3 and extra fiber, you won't need to feel guilty when you steal a few from the cookie jar.

Ingredients

  • 1/2 c puréed prunes
  • 1/3 c honey
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 c puréed black beans
  • 1/3 c cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 c quinoa flour
  • 1 T flax seed
  • 1 c mini chocolate chips

Instructions

  • Preheat oven to 350°.
  • In a large bowl, beat puréed prunes, honey, egg whites and vanilla until well blended.
  • Add black beans, cocoa powder, baking soda, quinoa flour, and flax seed. Mix well.
  • Stir in chocolate chips.
  • Drop by rounded spoonfuls onto ungreased cookie sheet.
  • Bake for 10-12 minutes.
  • Cool slightly on cookie sheet before moving to wire rack to cool completely.

Notes

If you REALLY don't like prunes, or just want a slightly less sweet cookie, substitute mashed avocado for the prunes. I prefer the cookies that way but my kids gave it the thumbs down which is why I published the prune version.
