One Pot Creamy Chicken Mushroom Pasta

- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 oz baby bella mushrooms sliced
- 1 8 oz pkg Seeds of Change® Mushroom Simmer Sauce
- 8 oz whole wheat penne rigata
- 2 cups chicken broth
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups fresh baby spinach
- shaved parmesan to garnish
In a large skillet over medium high heat, heat olive oil. Add chicken and brown on both sides (about 2-3 minutes per side).
Add butter and mushrooms to skillet and cook for 3-4 minutes.
Add sauce, broth, milk, garlic powder, salt and pepper. Bring to a boil, then reduce heat to medium. Cover and cook for 15-20 minutes (until chicken is no longer pink in the middle).
Remove from heat. Stir in spinach.
Serve immediately. Garnish with shaved parmesan.
