One Pot Creamy Chicken Mushroom Pasta

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 oz baby bella mushrooms sliced
  • 1 8 oz pkg Seeds of Change® Mushroom Simmer Sauce
  • 8 oz whole wheat penne rigata
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups fresh baby spinach
  • shaved parmesan to garnish

Instructions

  • In a large skillet over medium high heat, heat olive oil. Add chicken and brown on both sides (about 2-3 minutes per side).
  • Add butter and mushrooms to skillet and cook for 3-4 minutes.
  • Add sauce, broth, milk, garlic powder, salt and pepper. Bring to a boil, then reduce heat to medium. Cover and cook for 15-20 minutes (until chicken is no longer pink in the middle).
  • Remove from heat. Stir in spinach.
  • Serve immediately. Garnish with shaved parmesan.
