I'm so glad you enjoyed the sugar free version that you made. Thank you so much for sharing all of the information about how you made it and the tips about how to soften it. I'm sure my readers will appreciate it.

I made a Sugar Free version, using homemade Sugar Free Sweetened Condensed Milk and Lucky Leaf Lite Apple Pie Filling. It can be purchased through Walmart.com. It was absolutely delicious. The only caveat being that I needed to let it sit out at least 55 to 65 minutes for it to soften enough to be eaten. That's not unusual for KETO ice creams. I did not have any vegetable Glycerin left or a tablespoon of that would have helped. It would have shortened the softening time, without changing the flavor. If you purchase "Glycerin" you have to make sure it's pharmaceutical or food grade. I have made probably 50 different flavors of KETO ice creams in the last decade and this is another good addition. Cinnamon is a good ice cream flavor, too. I think next time, I will add a bit of cinnamon and nutmeg to this.

I haven't tried a sugar free version of this recipe. I looked it up, and the suggestions I found were to use sugar free sweetened condensed milk and sugar free apple pie filling. I'm not sure if those suggestions would work for your diabetic diet or not.
