Low Carb Chicken Broccoli Casserole

This Low Carb Chicken Broccoli Casserole has all the delicious flavor of the classic dish without all the carbs. Not all carbs are bad, and the few carbs you’ll find in this recipe are the kind you want — full of fiber from a cruciferous vegetable (i.e. broccoli).

What’s Wrong with Carbs?

Despite what you might have heard, not all carbs are bad. Bad carbs can cause spikes in blood sugar levels and are generally, lacking nutrients.

They’re also really easy to spot. They tend to be in “white” foods like white bread, white rice, white pasta, and pastries.

These foods are white because they’ve been processed and most (or all) of the fiber and nutrients have been stripped out of them. Sugary foods and drinks are also loaded with bad carbs.

Another way to identify bad carbs is to pretend you are a 5-year old and can eat whatever you want. Pretty much everything you’d pick is a bad carb (e.g. sweetened cereal, fruit punch, macaroni, Pop-Tarts, and soda).

In contrast, good carbs contain several helpful nutrients and should actually be a part of a healthy diet. You’ll find these in whole grains (or “brown” foods), vegetables, fruit, and beans.

In fact, you should be including good carbs from fruits and vegetables at every meal since your body desperately needs the fiber they provide.

That’s why this Low Carb Chicken Broccoli Casserole isn’t a zero carb dish. Your body needs the broccoli in this dish (plus it tastes amazing with the sauce).

How to Make Low Carb Chicken Broccoli Casserole

I don’t know about you, but I have way better things to do than spend hours and all my energy on dinner. So, this recipe, like almost all of mine, was created with ease and speed in mind.

Step 1: Combine Ingredients

That’s right, we’re going to add all of the casserole ingredients except the cheese to a large bowl — chicken, broccoli, cream cheese, mayonnaise, sour cream, onion powder, garlic powder, and a little salt and pepper.

Stir them all together until they’re well combined. You want to make sure the broccoli and chicken pieces are well coated in the other ingredients.

Step 2: Transfer to Baking Dish

Next, you just need to pour the casserole mixture into a baking dish.

Then, sprinkle shredded mozzarella over the top.

Step 3: Bake

Pop the casserole in the oven and bake at 350 degrees for about half an hour. Since we started with pre-cooked chicken, we just need to bake it long enough to melt the cheeses and heat the dish through.

Remove from oven and serve immediately. It’s best while it’s still hot from the oven.

Ingredients
  

  • 2 cups cooked chicken diced
  • 1 cup broccoli florets steamed
  • 4 oz cream cheese softened to room temperature
  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions
 

  • Preheat the oven to 350 degrees.
  • Combine the chicken, broccoli, cream cheese, mayonnaise, sour cream, onion powder, garlic powder and salt & pepper in a large bowl. Mix well.
  • Pour the mixture into a baking dish and sprinkle the mozzarella cheese on top.
  • Bake for 25-30 minutes or until heated through.
  • Serve warm with a side salad.
