In reply to <a href="https://wondermomwannabe.com/lasagna-casserole/#comment-211231">Erin</a>.

Great questions:
1. Yes you can substitute cottage cheese for the ricotta (https://wondermomwannabe.com/replacement-for-ricotta-cheese/). If you want a smoother texture closer to ricotta, blend the cottage cheese in a food processor for a few seconds.
2. You could either set aside 1/2 cup of the mozzarella and only add 1 1/2 cups to the mixture, or if you prefer a cheesier casserole, you could use an extra ½ to 1 cup beyond the listed amount for the topping.

It is similar to ziti, although it's made with penne pasta instead of actual ziti. That's great it's a recipe that you like to make!

That's a great idea to make 3 at a time, so you can have it ready for another dinner! It sounds like your family really enjoys the nice meal and time together.

I stumbled upon this recipe but chance and I made it the same day for dinner. I gave it my own little tweaks to suit my family but this is definitely a keeper!! My whole family enjoyed it and I really enjoyed making it.

It looks yummy:)!!!
For traditional lasagna I use the oven ready noodles. They do not need to be cooked first. I usually make 3 at a time. We call it OUR BIG COOK Lasagna. We bake one for dinner that night and the other two go in the freezer unbaked. I take a frozen one out of the freezer the day before to thaw in the fridge and then bake as usual. The kids know we will have lasagna on "pasta night" about every six weeks. We make it a feast with garlic bread and Caesar salad. Now that my oldest son has moved out someone usually calls "his piece" for lunch the next day:)!!!
