It’s really just to achieve a good seal on the jar to keep it fresh longer. Does nothing for the actually stability of the creamer so if you’re using it right away, you could skip this step.

Yes, you cover the jars in the instant pot. I used 2 pint-sized mason jars with lids (make sure they are metal lids, not plastic). I haven’t tried it with almond milk, but I know I have seen almond milk creamers, so I assume you could try it and see.

It will keep for 7 to 10 days, but also check the expiration date of your whole milk.
