I recently joined a group of bloggers who challenge each other each month to come up with a cookie recipe based on a theme.

Healthy Double Chocolate Chip Cookies

This month’s theme was healthy cookies (my favorite kind!) and I had a great time creating this recipe for Healthy Double Chocolate Chip Cookies.

That’s right, they’re indulgent chocolate cookies that are actually good for you. And I’m not calling them healthy just because they have less fat and calories than other cookies, but because they actually contain several essential vitamins, nutrients, and antioxidants.

Healthy Double Chocolate Chip Cookies

Not just low-fat, these cookies are actually good for you. Chock full of antioxidants, omega-3 and extra fiber, you won’t need to feel guilty when you steal a few from the cookie jar.

Ingredients
  

  • 1/2 c puréed prunes
  • 1/3 c honey
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 c puréed black beans
  • 1/3 c cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 c quinoa flour
  • 1 T flax seed
  • 1 c mini chocolate chips

Instructions
 

  • Preheat oven to 350°.
  • In a large bowl, beat puréed prunes, honey, egg whites and vanilla until well blended.
  • Add black beans, cocoa powder, baking soda, quinoa flour, and flax seed. Mix well.
  • Stir in chocolate chips.
  • Drop by rounded spoonfuls onto ungreased cookie sheet.
  • Bake for 10-12 minutes.
  • Cool slightly on cookie sheet before moving to wire rack to cool completely.

Notes

If you REALLY don’t like prunes, or just want a slightly less sweet cookie, substitute mashed avocado for the prunes. I prefer the cookies that way but my kids gave it the thumbs down which is why I published the prune version.

  4. I haven’t ever tried baking healthy cookies but I am afraid that my husband and kids wouldn’t try them if they knew what the real ingredients were. hahah.

  5. I don’t know if I do or don’t like prunes… So I will have to try it that way. If I don’t, I do know I love avocado!! So I would absolutely love it that way, hopefully?

    I was actually lucky enough to taste both versions of this cookie. I agree with Corinne, the avocado ones were better, not so sweet. Amazingly, they did taste like I was cheatimg on my diet, I will be making my own batch today!. thank you for doing all the work for me.
