However, since you said the chips freeze so hard, if you want to try it, you could melt semisweet or dark chocolate with a little coconut oil, let it cool slightly, then drizzle it in thin ribbons as you layer the ice cream

I have never head of mint chips? Any chocolate I have tried using as chips in ice cream freezes so hard. Is there a chocolate that works good for chips?

Oh my world, this looks so delicious! My kids love ice cream and making their own would be such a treat!
